Blueberry Pancakes

Method:

 

Step 1:

Sieve the flour, sugar, baking powder and salt into a large bowl.

 

Step 2:

Beat the buttermilk, butter and egg together in a separate bowl then pour onto the dry ingredients now beat the mixture together until it forms a smooth batter.
Now gently stir in the blueberries.

 

Step 3:

Heat a large frying pan over a medium heat then once the pan is hot using a pastry brush oil the bottom of the frying pan using the sunflower oil. 

 

Step 4:

Drop as much of the batter as you like into the frying pan and spread around into a circle. Fry until you see bubbles forming on the surface then using a spatula flip the pan cakes over and fry for about 1-2 minutes now remove from the pan making sure both sides are golden broth and serve. Repeat this frying stage until you have used
up all the batter. 

INGREDIENTS:

 

140g Plain flour

2 tbsp Caster sugar

2 tbsp Baking powder

½ tsp salt

225ml Buttermilk

3 tbsp Melted butter

1 Large egg

140g Blueberries

5 oz Sunflower oil
for greasing the pan
