Afternoon Tea Scones

1kg Self-raising flour
110g Sugar
7g Salt
240g Butter
1 Egg
660g Milk

• For fruit scones add 200g of sultanas
• For cherry scones add 300g glacé cherries
• For cheese scones add 100g of grated mature cheddar cheese


Step 1:
Place the self raising flour, salt, sugar and butter into a mixing bowl and crumble ingredients together.

Step 2:
Add the milk gradually and mix to a smooth dough. Depending on the kind of scones you are making add sultanas, glacé cherries or cheese knead into a ball and roll out to 1/2 inch thick and cut into rounds. Brush scones with beaten egg and place on a baking tray.

Step 3:
Bake in a preheated oven at 450°F/ 230°C (Gas 7/8) for 12-15 minutes.
