Mince Pies

Method:

Step 1:

Sift the flour into a mixing bowl add the butter and using your hands rub in the butter until it resembles bread crumbs. Now mix in the sugar and egg yolk.
Now add enough milk to make a soft dough.

Step 2:

Turn the dough out onto a lightly floured work surface and knead until smooth.

Step 3:

Now roll the dough out using a rolling pin until it is about 1cm / ½ an inch thick
and cut out 12 circles of about 7cm / 2 ¾ inches in diameter for the bases. Cut out some smaller shape stars using a star cutter for the tops. Dust 12 tartlet tins with flour and line them with the dough circles. Using a fork prick the base bottoms, then fill each pie with mincemeat. Place the star shapes on the top and brush all over using the beaten egg. Now bake in a preheated oven of 180
°C/350°F/Gas mark
4 for 15-18 minutes or until golden brown. Once baked remove from oven and
place on a cooling wire then dust with icing sugar.
