Puff pastry is famously considered one of the more “technical” doughs, but in reality, with a little patience and the right flour, it’s surprisingly achievable at home.

Classic Homemade Puff Pastry
This recipe gives you beautifully layered pastry perfect for sausage rolls, pies, tarts, and more.
Ingredients
500g Nelstrop Traditional Strong White flour
5g fine sea salt
300ml cold water
50g soften unsalted butter
For Lamination
350g cold unsalted butter
Extra flour for dusting
Method
1. Make the dough
Mix the flour, soften butter, and salt in a large bowl.
Add the cold water gradually until a soft but not sticky dough forms.
Knead lightly for 5 minutes.
Shape into a flat rectangle, wrap, and chill for 30 minutes.
2. Prepare the butter block
Place the cold butter between two sheets of baking paper.
Tap and roll it into a flat square roughly 2cm thick.
Chill until firm but pliable.
3. Laminate (create the layers)
Roll the chilled dough into a rectangle twice the length of the butter square.
Place the butter onto the centre of the dough and fold the uncovered dough on each side of the butter over the top of the butter to encase it. Seal the edges well.
Roll the pastry out into a rectangle about 3cm thick and complete your first fold (half turn).
Chill for 20–30 minutes.
Repeat for a total of 6 folds (half turns), chilling between each.
o To complete a half turn take one edge of the dough two thirds of the way across the dough and then take the other third that is not covered and fold it to the opposite edge of the dough.
4. Your puff pastry is ready
After the final chill, your pastry is ready to roll, fill, and bake.
5. Assembling the Sausage Rolls
Roll your pastry to 1.5cm-2cm thick, cut the pastry into strips around 10cm-15cm wide, wrap it around your favourite sausage meat filling, egg‑wash generously, and bake until gloriously golden.
