My favourite by far

Over decades of bread making - learning, changing, improving, discovering, testing different techniques, trying different flours, etc - I've long since settled on this. I've tried loads of different flours and this is my favourite by far. It's just brilliantly consistent and flavoursome.
Context for information: I'm exclusively a sourdough maker, using a starter culture I've had for as long as I can remember. I don't waste it by chucking some away each feed, I just keep the minimum amount necessary (it does not get more acidic despite people believing that it does). I use a lazy folding technique rather than kneading. It takes about 40 hours in total (including overnight in the fridge before baking in the morning) from starting to bringing it out of the oven. It's really easy and the results are superb thanks to Nelstrops wonderful flour.
